Setting Up a Food Business in NYC

I am starting a candy business but the hard candy takes a long time to dry or mold. Too long in its current state for an incubator. I tried to get molds made but this is kind of a struggle. Does anyone know how to find a kitchen with more flexible work hours or the best way to bootstrap on this as the cottage laws are so strict here

Hi Nikki, What was the struggle of having the molds made? Price? Product Quality? Cottage laws are strict for good reason almost directly tied to food safety. I am sure your home kitchen will grow too small for the great product you are going to sell anyways. Who are you selling to? What does the current demand look like? I hope i can help. Thanks.
